If you've looked at our menu, you might have noticed something unusual.

Rather than serving "Thai chicken", we've chosen three specific traditions from three places in Southern Thailand.

Hat Yai.
Pattani.
Narathiwat.

To us, these aren't simply menu items. They're reminders that food changes from town to town, family to family and generation to generation.

Southern Thailand has one of the country's richest food cultures, shaped by Thai, Malay, Chinese and Muslim communities that have lived alongside one another for centuries.

Each tradition tells a different story.

Southern Bird simply brings a few of them together.
